做法:春笋(sǔn )切成片后加少许盐(yán )捞出后用(yòng )清水浸泡,生姜(jiāng )切片,葱切(qiē )成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加(jiā )入生抽(chōu )、老抽、蚝油翻炒均匀,加入少(shǎo )量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖(gài )大火煮开后转中(zhōng )火。煮(zhǔ )到水快熬干(gàn )的时候加(jiā )入盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖焖。
