做法:春笋切(qiē )成片后加少(shǎo )许盐捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生(shēng )姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋,盖上(shàng )锅(guō )盖大火煮开后转中(zhōng )火。煮(zhǔ )到水(shuǐ )快(kuài )熬(áo )干的时候加入盐(yán ),翻炒均匀(yún )稍收汁(zhī )时(shí )盖上锅盖焖。
