做法:春笋(sǔn )切成片后加少许(xǔ )盐(yán )捞出后用清(qīng )水浸泡,生姜切片(piàn ),葱切成段。锅(guō )烧热,倒入2勺油,放(fàng )入生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟(zhōng )左(zuǒ )右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩住春(chūn )笋(sǔn ),盖上锅盖大火煮开(kāi )后转中火。煮(zhǔ )到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
