做(zuò )法:春笋切成(chéng )片(piàn )后加少许盐捞出后用清水浸(jìn )泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入(rù )2勺油,放(fàng )入(rù )生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到(dào )水快熬干(gàn )的时(shí )候加入盐(yán ),翻炒均匀稍收汁(zhī )时盖(gài )上锅盖焖。
